Kurkure Bhindi: Crispy Indian-style okra

Crispy Indian-style Okra

Ingredients:

Okra (Lady finger) – 400gms
Onion – 400gms
Cornflour – 2tbsp
Rice flour – 2tbsp
Gram flour (besan) – 200gms
Turmeric – 1tsp
Coriander powder – 1tbsp
Red chilli powder – 1tsp

For garnish:

Fresh coriander – 100gms
Dry mango powder – 25gms
Salt – 10gms
Lime juice of 1/2 a lime

Method:
1. Wash the okra (lady finger) lightly under running water in a perforated container or colander. Wipe dry with a kitchen cloth.

2. Cut lady finger diagonally into slivers cutting off both ends

3. In a stainless steel bowl mix together the above ingredients except the ingredients for garnish .

4. Sprinkle water till the mixture is wet and lumpy.

5. In hot oil, slowly release the damp mixture close to the oil in different areas so that it does not form a lump during frying.

6. Fry till golden brown.

7. As soon as you remove the okra after frying, sprinkle a pinch of salt, dry mango powder (known as amchur powder), freshly cut coriander and a dash of lime juice.

8. Serve hot.

The dish perfectly goes well with beer or just as an appetizer.
